The Bluefin Tuna Ventresca is obtained from the finest part of Thunnus thynnus. Handcrafted from that noble part that is the belly, it derives its peculiarity both from the fact that it can be only obtained from a small portion of the whole fish, and from its unique extreme softness due to an abundance of lipids and Omega-3s.
