Lavorata artigianalmente da quella parte nobile che è il ventre, deriva la sua particolarità sia perché ricavabile da una piccola porzione dell’intero pesce, sia perché dotata di una morbidezza unica dovuta ad una abbondanza di lipidi e di omega 3.
